Choy Sum In Thick Black Sauce

600gm Chinese Bok Choy | 600 gm Sawi Bok Choy (sawi bunga muda) |
100gm Dried Anchovies | 100 gm Ikan Bilis |
200ml Thick Black Soy Sauce | 200 ml Sos Pekat Hitam Soya |
1” Aged Ginger | 1” Halia Tua |
5 Shallots | 5 Ulas Bawang Merah |
5 Clove of Garlic | 5 Labu Bawang Putih |
5 pieces Dried Red Chilly | 5 Chili Kering |
2 Tbsp. of Cooking oil | 2 Sudu Besar Minyak Masak |
1 Tbsp. of Corn Powder | 1 sudu besar tepung jagung |
Salt To Taste | Garan secukup rasa. |
Preparation of ingredient / Menyediakan Bahan2
Clean Bok Choy, and don’t separate the stalk | Bersihkan Sawi bunga “bok Choy” dan jangan asingkan batangnya. |
In a blender grind ginger, shallots, garlic and the dried anchovy. Make to a rough paste. | Di kisar kasar sahaja semua bahan seperti halia, bawang putih, bawang merah dan ikan bilis menjadi pes. |
Mixed thick black soy sauce with the corn powder | Campurkan Sos pekat soya dengan tepung jagung. |
How to cook? / Cara 2 memasaknya.
In a hot wok add in the cooking oil. | Masukan minyak masak kedalam kuali yang telah dipanaskan. |
Put in the grinded paste, lower the heat to medium level while stir mix the ingredient gently. | Masukan bahan yang dikisar seperti pes lalu dikacau dengan perlahan2 |
Add in the thick black soya sauce and corn powders mixed and stir slowly until cook. | Masukan sos soya pekat hitam yang dicampurkan dengan tepong jagung. |
Add in Bok Choy and dried chili and continue stir mix the ingredient very gently. Add salt to taste | Masukan Bok Choy, chili kering lalu dikacau perlahan sehingga rata dengan dimasukan garam secukup rasa. |
Stir for another 3-4 minutes, upon fully cooked, Switch off the heat, and now you can serve it to others. | Kacau perlahan selama 3-4 lagi. Masakan sudah sedia, dan bolehlah dihidangkan dengan Nasi Panas. |
